Sunday Morning Eggs

Eggs on toast

WAH Tomato is the gentle one in the family — sweet, mellow, with just a hint of warmth. It's the jar I reach for in the morning when my head is fragile and I need something kind. Good bread, good butter, a runny yolk, and a quiet spoon of tomato chilli oil. This is breakfast as therapy.

Method

    Toast the sourdough until deep golden — you want it strong enough to hold the egg without going soggy.

    While it toasts, melt a knob of butter in a small non-stick pan over medium heat. Crack the egg in.

    Cook for 2 minutes until the white is set but the yolk is still wobbling. Baste the white with hot butter if you want it lacy at the edges.

    Butter the toast generously while it's still hot. Slide the egg on top.

    Spoon WAH Tomato over the egg in a slow, deliberate way. Flaky salt, black pepper, chives. Sit down. Breathe.

WAH tip

Add half an avocado, sliced, for the full Sunday treatment. Or a slice of cured ham if you're rebuilding.
